2 salmon fillets (about 150g each)
200g fresh asparagus spears. If you can’t get hold of asparagus, then you can substitute with tender stem broccoli!
2 tablespoons olive oil
2 cloves garlic, minced
2 teaspoons dried dill
Salt and pepper to taste
Fresh parsley leaves, for garnish
1. Preheat your oven to 200°C (180°C for fan ovens) or 392°F.
2. While the oven is heating, prepare a baking sheet by lining it with parchment paper.
3. Trim the tough ends of the asparagus spears.
4. In a bowl, toss the asparagus with olive oil, minced garlic, dried dill, salt, and pepper. Ensure the asparagus is evenly coated.
5. Spread the seasoned asparagus evenly on the prepared baking sheet.
6. Place the salmon fillets on top of the asparagus.
