For the Quorn and Vegetable Stir-Fry:

250g Quorn pieces (chunks or strips)

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 carrot, julienned

1 cup broccoli florets

1 small courgette (zucchini), sliced into thin rounds

2 cloves garlic, minced

1 tablespoon vegetable oil

Salt and pepper to taste

Chopped peanuts (for garnish, optional)

Fresh cilantro leaves (for garnish, optional)

3 tablespoons peanut butter (smooth or crunchy)

2 tablespoons soy sauce (low-sodium)

2-3 tablespoons warm water (for thinning the sauce)

Instructions:

1. Prepare the Peanut Sauce:

In a bowl, whisk together peanut butter, soy sauce, maple syrup (or agave nectar), rice vinegar, sesame oil, grated ginger, and red pepper flakes.

Add warm water gradually, stirring continuously until the sauce reaches your desired consistency. Set aside.

Return the sautéed Quorn to the pan with the stir-fried vegetables. Stir to combine and heat through for 1-2 minutes.
